Job Description

unctions
1. Coordinates all food production staff’s activities by delegating work assignment assuring
the timely completion of meal preparation.
2. Insures all standardized recipes are followed as they are written, reports any recipe
content concerns to the Director of Culinary and Nutrition Services.
3. Maintains a strict “clean as you go” policy for self and staff assuring a clean, professional
work environment.
4. Strictly follows and enforces the established safety standard for equipment use and work
practices.
5. Assists in the completion of the Quality Assurance Meal Record Log. Participates in the
taste testing and temperature recording of all menu items.
6. Coordinates responsibility with the inventory clerk or designee in checking for the next
day’s food preparation needs. Pulls meats and other frozen items out of the freezer in a
timely manner which permits proper thawing procedure to be followed.
7. Assures that plate presentation is acceptable and line efficiency is maintained.
8. Develops menus for nightly chef specials, theme or holiday meals and the community’s
house menu.
9. Provides therapeutically correct food items as specified production sheet.
10. Maintains a positive work environment to ensure high productivity.
11. Reports all equipment maintenance concerns to management.
12. Assists in the interviewing and hiring of food production staff.

Job Functions
13. Identifies employees in need of counseling and participates in disciplinary sessions under
the supervision of the Director of Culinary and Nutrition Services.
14. Trains all persons under their direct supervision.
15. Demonstrates new cooking techniques and equipment to the staff.
16. Coordinates the purchasing of all food with the management team.
17. Performs other duties as assigned.

Job Requirements

The ideal candidate will meet the following requirements:

  • Completion of degree in Culinary Arts
  • Bachelor Degree preferred or 7 years’ experience working in a kitchen
  • ServSafe certified preferred
  • 3 years of supervisory experience or supervisory training
